Lime Pound Cake

Quick snap! An economic version of Lemon Pound Cake, using lime which is always available anytime in here and absolutely cheap. Get the recipe from my senior besties @anitajoyo at Instagram, and since then I could never move on. My husband brought it to his office and the next day his colleague order 3 big pan. That yum!! Nuff said.

Lime Pound Cake

200 gr butter
270 gr plain flour
3/44 cup buttermilk
Zest from 5 lime
1/3 cup lime juice
1,5 tsp salt
1/2 tsp baking powder
200 gr sugar
5 large eggs

Preheat oven to 180 C degrees. Butter a bundt pan, dust with flour and tap out excess, set aside.
Whisk together flour, salt and baking soda. Stir together lemon juice, zest and the buttermilk.
Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix until pale and fluffy.
Add eggs, one at a time, beating well after each addition.
In low speed, alternate mixing in flour mixture and milk mixture, do not overmix.
Pour batter into prepared pan. Bake until a cake tester comes out clean, about 50-60 minutes.

Lime Glaze:
1 cup powdered sugar
4 tbsp lime juice

Stir together sugar and lime juice until you get the right consistency. it should be thick but pourable.
Pour the glaze on top of cool cake. Enjoy.
